No '72 Stang ever came with a big block, '71 was last year... The 428s were gone by '72 last used in the '70s, none were built in a four bolt... The 429s were avail four bolt in the Super Cobra Jets and were used in '70 & '71 Torino & Cyclone as well as '71 Mustang & Cougar, they will be pricey if you find one...

What can a 351 be bored and stroked to?
1971-73 Mustangs are same body/chassis.
The 429 was not an option after 1971, but it is a easy bolt in no mod installion.
As to the other options of building a 351, why do that when you could have a stock 429 with HP and torque and build from there if wanted.
A 460 would also be a bolt in.

Go to Yellowbullet.com. They have some threads on their of people reproducing big block Fords with beefier internals, aluminum blocks, etc. Should be able to find what you are looking for.
I think you can put a bottom girdle on a two bolt block and be fine so you might want to look for some older junk yards down down by you and try and find some late 60's early 70's station wagons, trucks etc and you should be able to find a 429 or 428 block.

Except for maybe chrome valve covers and possibly air cleaner, ALL engines from 1966 to 1981 were painted Ford Corporate Blue... Later ones were a industrial gray, earlier were black with color keyed valve covers and air cleaner...
